Healthier Almond Oat Holiday Cookies
Makes ~18–20 cookies
Ingredients:

1 cup rolled oats

1 cup almond flour

1 tsp cinnamon
-
½ tsp baking soda
-
¼ tsp salt
-
1 egg (or flax egg: 1 tbsp flaxseed + 3 tbsp warm water)

¼ cup coconut oil (melted) or avocado oil
-
⅓ cup maple syrup or honey

1 ½ tsp vanilla extract
-
Optional festive add-ins:

¼ cup dark chocolate chips

¼ cup dried cranberries
-
2 tbsp chopped pecans or walnuts

Instructions:

Preheat oven to 350°F and line a baking sheet with parchment paper.

In a bowl, whisk together the egg, coconut oil, maple syrup, and vanilla until smooth.

In a separate bowl, combine oats, almond flour, cinnamon, baking soda, and salt.

Add dry ingredients to wet ingredients and stir until a soft dough forms.

Fold in chocolate chips, nuts, and/or cranberries if using.

Scoop dough into rounded tablespoons onto the baking sheet and gently flatten.

Bake 9–11 minutes, until lightly golden around the edges.

Allow cookies to cool for at least 10 minutes — they firm up as they cool.
